AUSTRALIA | The Langham, Melbourne’s Christmas Recipe

We are currently serving a Christmas themed High Tea called “Love, Peace, Scones” which features a beautiful Christmas tree cupcake. 

Cupcake Ingredients

12 mini ice cream cones
¾ cup cocoa powder
1½ cups flour
1½ cups sugar
1½ tsp baking soda
¾ tsp baking powder
¾ tsp salt
2 large eggs
1½ cups warm water
¾ cup buttermilk
¼ cup plus 2 tbsp vegetable oil
¾ tsp pure vanilla extract
Icing sugar, for sprinkling

Cupcake Directions:

  1. Preheat oven to 165°c.
  2. Line a 12-cup mini-muffin tin with cupcake wrappers
  3. Whisk together cocoa powder, flour, sugar, baking soda, baking powder and salt in a large bowl
  4. Whisk together eggs, warm water, buttermilk, oil, and vanilla in a medium bowl
  5. With a mixer on low speed, gradually add egg mixture to flour mixture, beating until just combined
  6. Raise speed to medium, and beat for 3 minutes
  7. Carefully pour batter into cupcake wrappers, filling each two-thirds full (these will be the tree bases)
  8. Bake until a skewer inserted into centre of cake comes out clean (approx. 15 minutes)
  9. Let cupcakes cool on a wire rack
  10. Use a serrated knife to trim top of each cupcake to create a flat surface
  11. Place a dab of frosting on top of each cupcake, and position an ice cream cone on top
  12. Place frosting in a bag fitted with a small star tip and pipe frosting decoratively all over ‘tree’
  13. Sprinkle with icing sugar
  14. Top each tree with a mini gingerbread star

Cupcake Icing Ingredients

450g cream cheese, room temperature
3 tbsp icing sugar, sifted
1 tsp pure vanilla extract

Cupcake Icing Directions:

  1. Beat cream cheese with a mixer on medium speed until very smooth, 3 to 4 minutes
  2. Add sugar, and beat for 2 minutes
  3. Beat in vanilla

Trees can be refrigerated, uncovered, for up to 6 hours before serving.
