BRAZIL | Panettone Recipe from Juliana at Marriott São Paulo
Every house has a Panettone or Chocotone during this time of the year, especially in Brazil as it is a very traditional treat in our Christmas Holiday.
2 cups of warm water
1 cup of wheat flour
4 fresh biological yeast tablets
200 grams of butter
1 cup and a half of sugar
6 egg yolks
1 kilo of wheat flour
2 cups of candied fruit
Half a cup of chopped walnuts
1 cup and a half of black raisins
- In a bowl, combine 1 cup of warm water, 1 cup of the flour and the yeast. Mix everything together and let it stand for 10 minutes. Then add the butter, salt, egg yolks, sugar, another cup of warm water and the rest of the flour. Mix everything until combined and dough like and let it rest for another 40 minutes or until doubled in volume.
- In another bowl, mix the fruit, raisins and walnuts.
- Divide the dough into four parts and flatten. Spread the filling across each piece and roll up like a jelly roll, attach the ends and place in a Panettone pan. Repeat with the other pieces and leave to rest for 10 minutes.
- Place a tablespoon of butter on each Panettone and bake in a preheated oven at 200°C for 40 minutes or until golden brown.
Instead of fruit, you can substitute dark chocolate in order to have a Chocotone. Check out the chef’s at the hotel whipping up some Chocotones.
